Recently fitted a new throttle peddle
how do i do the following statement ive read

Installation is the reverse of removal. If you are installing a new pedal you will need to adapt the pedal to the EMC using a Volkswagen scan tool or equivalent. If the car is an automatic or DSG, the kick down function will need to be re-established using the same tool.

I would imagine using VCDS or a similar tool. If you have a look on the Ross Tech website, it should give you the detailed procedure to follow.
