My car is coming up to 1 year old, but only has ~6200 miles on it, has been topped up with oil. No major problems (apart from throttle problem once the other day -being checked thursday).
Im reluctant to get it serviced, because its still a bit off the 10,000 mile mark. Would I be affecting my warranty by extending out the period between servicing? Would end up getting it serviced towards end of summer anyway (around 9000 miles).
Low mileage - to service or not?

If it's on longlife you've got upto 2 years between services, so no issue there.
But considering you do low mileage, I would say it should be on T & D in which case it would be every 10k miles / or 12 months. If it was me I would get it done for peace of mind but you pays your money you takes your chance

Re: Low mileage - to service or not?
It'll have long-life oil in it from the factory. You could choose to stick to long-life for the first one and then switch to annual, or you could stick to annual (if that's what it is already set to) - more for the whole car's well-being and not through need to change the oil.
It is a little cheaper per service to go annual, but overall cost of servicing will be a little more than longlife regime.
Longlife is for high milers - VW still expect to see your car for servicing nearly every 12 months, either on long-life because you do 15k+ miles per year, or on fixed interval where they know they'll see you every year, even though your mileage is low.

I believe the car is set up on annual, but oil is the standard long life castrol edge.
