So, I did what I normally do and rushed into buying something!
I purchased a new head unit thinking it would just be a simple swap over - my eyes are watering more than if I had been kicked in the nuts.
I have a scirocco 2011 with steering wheel control and the RDS510 head unit. I wanted to fit the new one in - Halfords have quoted £179 for the loom and 49 for the surround. Local fitting shop have quoted £250 to supply and fit the bits... is this about right? I am stunned by the prices!!!
Anyone had any experience of this/any other ideas?

might be able to give more info but at a guess your paying for 3 or 4 things
1. Adapter plate (This makes the head unit look right in the hole in the car)
2. Loom Adapter (Adapts the car's cables to what the pioneer needs)
3. Installation service
4. remote control adapter (not sure about this one as this would require canbus connectivity I think)

Thanks for the response Technane - I played around this weekend and got it sorted!
It is the Pioneer SPH -120 App Radio.
Shout out to the guys at https://www.caraudiocentre.co.uk" onclick="window.open(this.href);return false; really helpful and carried all the bits in stock - £73 in total and turned it into a pretty much plug and play scenario including control of the steering wheel!
For those interested the head unit is great - really pleased with it.
Anyone know how I get the code for the old radio to sell on?

It's usually on a card that should not be kept in the car,
looks like you need to phone VW, and they will give you the code,

They don't supply the cards with code for the stereo as the headunit it paired to the car and is only needed if the headunit is fitted to another car.
If you go to VW dealer with the VIN of the car the headunit left the factory in they will supply the code.
There are some eBay sites that say they can supply the code from the serial number of the headunit. Sounds dodgy to me but some people say it works.

Odd, but then I have a VW Card with the code on it for my RNS 510 but then I bought it second hand it wasn't original to the car.

They stopped supplying the cards with new cars around 2009/2010.
