I would definitely spend the extra £1000 on getting it mapped (say up to £500), lowered (say up to £300) and a cold air induction kit (£200).
Now your car will be fast, look sweet and sound angry...........that's got to be better than added silver plastic buttons on the steering wheel, white instead of red numbers on the MFD and different buttons on the climate control. The original design isn't that bad and the new look inside will just be a novelty that will soon wear off. Performance, sound and external looks won't though.
Just my opinion with £1000.
See I disagree with you on this.
I would rather spend the £1000 extra to have a more modern interior than the older mk5 style golf dash etc.
I think the multi function flat bottom sterling wheel seriously improves the look of the cabin along with the white dash speedo.
Yup I am with this.
It would cost you more than £1000 to retrofit everything, as doing a dual zone Mk6 upgrade is a PITA and not cheap either, steering wheel is £450, cluster £200 + coding,
I spent 5 years in 2 Mk5 Golfs and the improvements on the Scirocco (mine is a Mk6 style later model one) are well worth any extra. Will also always be worth more at resale time.

Only 15 2.0TSI with:
less than 40,000 miles.
under £15k.
Manual Gearbox
12 for DSG
Only 3 of them are black so not much choice out there.
I was really lucky, one came up only 15 miles or so from myself and I caught it within hours, and went to see it the next day & paid the day after that!
£11,800 I paid with 48k on the clock. Under 50k was my threshold for a '59 plate car. Private sale too mind.
