Ahhhhh okay, would its not be simpler to just say 2015? Or is there something I'm missing in my lack of experience..

No, because it's not as simple as that as VAG model years change over mid year (Week 23). So basically a MY2015 car is built between week 23 2014 and week 22 2015.
My car is registered 30/7/2011 but is one of the first MY2012 cars.
You'll soon learn that the word "simple" doesn't appear in the VAG vocabulary.

So if my car is 2014, but was built within the 23 weeks in 2015 it's classed as a MY2015? But the original year of the car is 2014?

Yes, if it was built on or after week 23 2014 it's MY2015. Obviously build date is different to registration date, the latter being based on Calender Year. It only really makes a difference if the change of Model Year brings in significant updates.

Just for completeness, sometimes VAG introduce updates in week 45 in which case these cars are referred to MY20XX.5
So if you are ever ordering a new VAG car you have to be aware that there can be major updates in week 23 and minor updates in week 45. In most cases, but not always, these updates are positive.
