My Rocco is not yet a year old but I'm not quite sure about winter-prep. Do I realistically need to clay bar or just polish ?

its too new for anything abrasive. Should consider sealants instead of polish. Also Iron X for removing metal particles embedded in the surface. Claybar, go for ones that requires only water as lube, otherwise you would need to buy a lube seperately.
