Surprised there is no codes stored, although it depends on what type of code reader you used. Some of the cheaper ones don't display all the codes.

EPC light normally refers to the fly by wire throttle therefore areas to look at are the throttle body and the throttle pedal.

No you're wrong with the 6mm because you've not taken into account the extra 0.5" width of the wheel. Therefore the wheel will have 12.35mm* less clearance on the outside to the wheel arch and 0.35mm* less clearance on the inside to the strut. * 6mm offset +6.35mm width = 12.35mm * 6.35 mm widt...

Yes, you could add 8mm/10mm spacers all round which would effectively give you an offset of ET42/40, so only 1mm difference from OEM. When some work is done on your car either by yourself or by someone else you become more assertive to looking for changes / issues and sometimes you pick up on something that you never noticed previously and persuade yourself it's new. We've all been there, enjoy the Scirocco.

If the car is running fine albeit with the EPC / EML on then the wire must be fine. If it was not the car would at best be running rough and at worst not start at all. Assuming the length of the wire is OK, just crimp on another suitable diamater eyelet and bolt onto the earth point.

Sounds like it as I'm pretty sure the wipers and washers don't normally work with the bonnet up as there is the risk of the wipers fouling the bonnet.

i think you were mistaken about the wipers previously working when you are stationary. On my Scirocco the wipers stop when I'm stationary and start again when I start moving and always have done.
